Vegetables baked in the oven is a perfect dish to me. You might combine it with quinoa and potatoes or eat it as a low carb dish.
I prefer organic and locally grown vegetables.
Set the oven to 200°C.
Clean, wash or peel your favourite vegetables. Cut them into bits and give them on a baking sheet. Spice your vegetables with salt, pepper and fresh herbs. You can also add chilli, dried herbs and olives.
Bake your vegetables for 20 minutes, potatoes and root vegetables will need up to 45 minutes. The smaller you cut your vegetables, the sooner it will be ready ;)
