Sticky Rice and Mango

We discovered sticky rice with mango at our Thailand journey in March. It is one of our favourite desserts now, next to the coconut-banana dessert.

We can't live without sticky rice and mango anymore and we are sure, you will love it, too.

Unfortunately you can't use any rice type. Best results will be reached with sticky rice. You can buy that type in Asian supermarkets or online.

 

Ingredients for 2 people:

1 cup of sticky rice

1 cup of coconut milk

1 pinch of salt

2 TBS sugar

1 Mango

 

Preparation:

Wash the rice thoroughly until the water is clear.

Soak the rice with water overnight (at least for 6 hours) in a covered bowl.

 

After soaking remove the water.

Use your steam cooker and steam the rice for 25 minutes.

If you do not have a steam cooker, you can also use your microwave.

 

 

Preparation in the microwave:

Wash the rice and fill it into a bowl. Pour water (1 ½ cups) upon the rice and cover the bowl with a plate.

Cook the rice for 4 minutes at the maximum heat in your microwave and stir it.

Cook the rice for additional 3 minutes.

The rice will be soft and the water absorbed. If there is still water, put the rice for one more minute in the microwave until the water is fully absorbed.

 

As soon as the rice is almost done you can start to prepare the coconut milk.

Heat the coconut milk, but don't cook.

Stir in sugar and salt and pour it over the sticky rice.

 

 

Peel and cut the mango into small quarters.

Serve sticky rice with mango pieces.
