Vegan Basil Pesto

Pasta is great!

There are countless types of pasta and countless ways to combine it.

I love wholemeal noodles with a creamy pesto especially at my cardio days.

 

Made out of tomatoes and pine nuts or basil and walnuts. There is no limit to combine vegetables, nuts and good olive oil.

 

Try my creamy green pesto, prepared in less than 20 minutes.

 

 

Ingredients for 3 servings:

300g noodles

 

Pesto:

50g fresh basil leaves

50g pine nuts

3 cloves of garlic

75ml olive oil

some lemon juice

salt and pepper

 

 

Preparation:

Heat water in a pot.

Add noodles and some salt as soon as the water is cooking.

Prepare the noodles according to the packet instructions.

 

Fill your blender with all the other ingredients and mix you pesto for a minute.

Not soft enough? Just add some cooking water.

 

Drain the noodles and mix immediately with the pasta.

I always use the pot to stir the noodles.

 

 

 

 

To be enjoyed directly.

Tip:
You can also add some fresh rocket salad or some roasted pine nuts as a topping.
